One of the Best Paris Restaurant L’Astrance is not your ordinary restaurant. It is established by two former employees and students of Alain Passard, the megachef who owns L’Arpège. Pascal Barbot is the one who is in charge of the kitchen while Christophe Rohat supervises everything outside. With their experience after working for years in L’Arpège, they have everything they need to create one successful restaurant which satisfies each of every customer who comes to dine in there.

The menu in L’Astrance changes in accordance with season but you will never miss the “ravioli” form which always present in every season. The restaurant also has the tradition for taking a break every August just after summer ends and before fall starts.

From outside, L’Astrance looks warm and friendly with its row of straw-filled-windows. Once you enter L’Astrance, you will be welcomed with a small wooden bar and a spiral metal staircase which will take you to balcony. Grey walls and its warehouse decorations in the dining room will accompany your dine in along with vertical and horizontal mirrors which create the illusion of bigger space.

As you have read above, it is not easy to get a reservation in L’Astrance. The suggestion that you should make reservation one month before is not an exaggeration. With only 26 seats available, sometimes the waiting list will go for two months long. If you get lucky enough, though, you will get the spot from someone who cancelled in the last minutes. However, that would be unlikely to happen.

L’Astrance offers the famous French cuisine with a little touch of oriental taste in an unorthodox manner. There is no traditional menu and diners can choose their own menu while the kitchen tries its best to prepare the foods. Prior to this, the kitchen has chosen the meals available for that day. There are only two pages in their menu which consists of three dinner course options, Déjeuner, Hiver, and Astranc.

Just like its menu, its cuisine is not also the traditional one. Forget about the rich-buttered foods with heavy saucing belongs to French tradition. The meals in L’Astrance are light and healthy, abandoning the fat in cream and butter which are the main source of cholesterol. Of course this choice costs them some customers, but seeing the waiting list it seems that they have nothing to worry about.

The service is also not disappointing. There are only few wait staff to see, but they all provide the best service and never disappoint customers. Foods come quickly and their team work is excellent.

This kind of arrangements in menu, presentation choice, and service professionalism have gained them three Michelin stars. The first one was awarded in 2001 just five months after their opening. The second and the third were awarded in 2005 and 2007.
