Spring restaurant in Paris is owned by Daniel Rose, a 33-year-old chef from Chicago, who set up the restaurant in the 9th arrondissement of Paris at its first opening. With small place that could only hold 16 diners at a time, he decided to make adjustment and let more people have the chance to experience his excellent foods.

Daniel Rose then moved his restaurant to a bigger place in the fifth arrondissement. Although considerably bigger, he maintains his restaurant signature of an open kitchen which allowed cooks to chat directly with their guests. This time, there are four cooks handling the kitchen area and the dining room is available for 28 diners max. Still, with the new capacity, you need to book one month in advance to ensure you can dine there. Of course, you may try your luck by dropping by at the last minute to see whether there are seats available.

The foods in Spring contains more carbs and heavy cream compared to other meals in Paris which tend to be healthier with vegetables and fresh herbs. However this has made the foods to be incredibly delicious and make you want to be back for more. It is just unfortunate that Spring has not yet had any vegetarian menu to offer for vegetarians who may have heard of Rose’s excellent dining and want to see whether it lives up to all the hype.

Another unique thing about Daniel Rose’s Spring is that there is no fixed menu that you can expect. Everyday, they change the menu so it will leave guests to guess what menu they can have today. This, has been a two-edge sword to Spring’s reputation. Some people are thrilled with this arrangement since there are always new menus to try and they love the surprise element of not knowing what foods that will come. However, some other may feel a bit confused as they are left wondering where the restaurant wants to do with its menu even after several visits.

Still, Spring is one of the most sought out reservations in Paris today. This is the kind of restaurant that will pop up one question every time you meet a person who tells you that he or she will dine there, “How does this person get the reservation?”

As the last treat, Spring actually serves bread and butter, something that you will find it rare in Paris. That to speak, whenever you feel like tasting a fine dining in Paris, then you must not miss this small elegant Paris restaurant with a taste of American.

  • Price : 64€ for seven courses dinner and 38€ for three courses lunch.

  • Accord mets-vins à partir de 58€
Reservation : Recommended. Reservations are only made by phone or by person between 10.00 hrs to 18.00 hrs from Tuesday to Friday and between15.00 hrs to 18.00 hrs on Sunday.
Please confirm your reservation 24 hours before your meal.
